Whole Chicken| Baked | Healthy | Christmas Chicken Recipe

This Chicken is so easy to make and such a  healthy option for any occasion. It reminds me of an expensive Boston Market Rotisserie Chicken but only costs me about $6.00 to make at home. This is a great healthy alternative to the Christmas Ham. I make this whole chicken all the time. There is always leftovers for wraps or sandwiches, the next day, and I just love it. I made this with rice and beans and have included a link to that recipe for you.

Puerto Rican Beans With Potatoes Recipe

Ingredients:3-4 pound whole Chicken
1 tbs paprika
1 tsp sea salt
1 tsp pepper
1 tsp sage
1tsp marjoram
1 tbs Olive oil

Directions: Preheat oven to 400 degrees. Remove bag containing gizzards, heart, and or neck from cavity of chicken. Toss it, or keep it to make gravy. Rinse chicken in cold water. Pat dry with paper towel. Place chicken in a baking dish. Season all sides with the spices and oil. Bake on 400 degrees for 1 hour then turn the temp down to 350 and cook 2 more hours. Puerto Rican Beans With Potatoes| Habichuelas Guisadas| Papas Guisadas| Pressure Cooker| Instant Pot

This is a very popular recipe that I personally LOVE! It's healthy and filling. I serve the beans over Brown Rice or Bulgur. This version is insanely easy and only takes 20 minutes, as opposed to the usual 40 it would take if I used the stove top.

I used my homemade black beans in this recipe and included that recipe incase you would like to try it. Homemade beans are cheaper and healthier.

It is your choice on what type of beans you use (kidney beans, northern beans, pinto beans). This recipe is good no matter what beans you try. Using canned beans will save you time, for sure.

Homemade black beans (optional step): 1 cup of rinsed black beans 3 cups of water
Directions: Add the beans and water to the pressure cooker. Set the pressure cooker to bean/ lentils and let cook. Takes 35 min. Drain the beans and add them back into the pressure cooker.

Mexican Style Brown Rice | Pressure Cooker

This Brown Rice only takes 15 min verses making it on the stove top for 40 min.

Ingredients: Serves 4-6
2 cups brown rice
3 cups water
1 tsp salt
1 tsp cumin
1tbs chili powder

Directions: Put all ingredients in the pressure cooker. Set to rice/risotto. Fluff with a fork after pressure releases. Any water will evaporate as the rice cools.

Check out the video! Video calls for 1 cup of rice but I found that it is better to use 2 cups of rice 3 cups of water.

Homemade Mexican Refried Beans| Pressure Cooker| 35 min

You have never been able to make beans from scratch, in only 35 min, until the Pressure Cooker was born. This recipe is a total life saver. Saves money and time. I buy 1 bag of beans for under $3 and it makes as many beans as about 5 or 6 cans. Before my Pressure Cooker, it took me 2 days to make beans, and I made a ton, at once, just to make it worth my time, then I had to bag and freeze the extras. NEVER AGAIN!


Ingredients: feeds 4-6
1 cup pinto beans
3 cups water
1 tbs Olive oil
1 tbs chili powder
1 tsp cumin
1 tsp Salt/ pepper

Add water and beans to Pressure Cooker. Close and set to bean/ lentil setting. Open after timer rings, and pressure releases. reserve about 2 cups of the cooking liquid or use water or stock. Add your olive oil and spices plus a small amount of the reserved liquid. Mash the beans with a potato masher or fork. Add more liquid until your beans are the right consistency.

Mexican Chicken Fajitas| Healthy| Dinner/ Lunch| No Seasoning Packet| Whole Wheat

You don't need taco seasoning to make mexican dishes from home!
This recipe is so delicious, easy and fun. You can have the flavors of Mexican food right in your home, for three fourths the cost of the restaurant. We use chili powder and cumin to spice up this dish and skip the taco seasoning packet completely. With the use of whole wheat tortillas instead of flour or corn, lite sour cream or plain greek yogurt to top it off, you will be putting a healthy twist on this traditional recipe.
Ingredients: feeds 4-6
1 pack chicken tenderloins cut in half, the long way (or 2 chicken breast cut in long strips)
1 yellow onion cut into long strips
1 green, red or yellow bell pepper cut into long strips
1 tbs olive oil
1 tbs chili powder
1 tsp cumin
Salt/pepper to taste
1 package of whole wheat tortillas
